12-hole muffin pan
Ingredients
2½ cups raw spinach
¼ cup oil
½ milk: You can use whole milk, low-fat, or any non dairy milk. Sometimes I like to use pediasure to add protein.
2 free range eggs
½ cup of rolled oats
3 tsp pure vanilla extract
1 ½ cups all purpose flour
1 ½ tsp baking powder
½ tsp salt
¾ cup chocolate chips
Instructions
Preheat the oven to 325°F/170°C. Line or grease a muffin tray.
Put all of the dry ingredients into the blender then add the wet ingredients. Blend until smooth.
Fill the muffin cups ¾ full. Sprinkle chocolate chips on the top of the muffins before baking. Bake for 15-20 minutes or until an inserted skewer comes out clean. Allow to cool in the tray for 10 minutes then remove and allow to cool completely on a wire rack.
